Step 1: Preparation

  • Rinse the mung beans.
  • Soak them in water for at least 30 minutes until ​they slightly split open


Step 2: Boil Mung Beans

  • Use room temp water to boil mung beans, not hot ​water
  • Add lots of lump sugar into the pot.
  • Bring to a boil on high, then simmer on low for ​about 45 minutes.

  • If there are small bubbles continuously rising in ​the pot, your heat is just right.

  • Stir the mung bean soup, and if you see the bean ​particles swirling smoothly beneath the surface ​and the skins of the beans have split open to ​reveal the white flesh inside, it means your mung ​beans are thoroughly cooked.
